Ingredients
- 8 eggs
- 6 oz ham
- three-quarters of the cheese
- 1/2 cup heavy cream
- 1 tbsp butter
- Salt
Method
PREP
- Heat the oven to 375F. Whisk 8 eggs with 1/2 cup heavy cream and a good pinch of salt until uniform and slightly foamy.
- Dice 6 oz ham and shred 4 oz Swiss. Stir three-quarters of the cheese into the eggs and hold the rest back for the top.
COOKING
- Melt 1 tbsp butter in a 10-inch oven-safe skillet over medium and cook the ham about 3 minutes, just to warm it through and pick up a little color.
- Pour the egg mixture over the ham and let it sit undisturbed 2 minutes, until the edges begin to set. Scatter the reserved Swiss over the top and move the skillet to the oven.
- Bake 18 to 22 minutes, until the center is puffed and no longer wobbles when you nudge the pan.
FINISH
- Cool 5 minutes so it settles, then cut into 8 wedges. Makes 4 servings; a serving is 2 wedges. Keeps 4 days and is good cold.
💡 Pro-Tip: Pull it while the very center still looks a shade underdone. Eggs carry over hard, and a frittata baked until it looks perfect in the oven will be dry and weeping water by the time it reaches the table.
