Ingredients
- 10 oz sirloin steak
- 1 cup cheese
- 1 tbsp sour cream
- 2 tbsp butter
- 1/4 cup heavy cream
Method
PREP
- Slice 10 oz sirloin steak thin and grate 1 cup cheese (about 4 oz) for the queso.
COOKING
- Sear the steak hard in 2 tbsp butter over high heat 2 to 3 minutes for a brown crust; season and set aside.
- In a small pan, melt the cheese with 1/4 cup heavy cream over low heat into a smooth queso.
FINISH
- Spoon the queso into two bowls, pile the steak on top, and finish each with 1 tbsp sour cream and jalapeno. Serves 2.
💡 Pro-Tip: Build the queso low and slow — melting cheese into warm cream, not boiling it, is what keeps it pourable instead of grainy.
