Ingredients
- 6-oz salmon fillets
- 1 tbsp butter
- 1 garlic
Method
PREP
- Pat two 6-oz salmon fillets very dry and season the flesh with salt; leave the skin on for crisp.
COOKING
- Heat 1 tbsp butter in a cast-iron or nonstick pan over medium-high until shimmering.
- Lay the fillets skin-side down, press flat 10 seconds, and cook undisturbed 4 to 6 minutes (about 90 percent of the cook) until the skin crisps and releases; flip and cook 1 to 2 minutes to 125 to 130F (safe minimum 145F). Add 2 tbsp butter and 1 garlic clove, let it brown.
FINISH
- Spoon the garlic butter over the fillets and serve. Serves 2.
💡 Pro-Tip: Cook salmon 90 percent on the skin side — it crisps the skin and cooks the delicate flesh gently, so it stays moist instead of chalky.
