Ingredients
- 8 oz raw pork belly
- Salt
Method
PREP
- Cut 8 oz raw pork belly into 1-inch cubes and pat them bone dry. Salt them generously and, if you have time, leave them uncovered in the fridge an hour to dry the surface further.
COOKING
- Lay the cubes fat-side down in a cold skillet and set it over medium — starting cold renders the fat slowly so the outside crisps instead of scorching.
- Cook 12 to 15 minutes, turning to brown every side, until the cubes are deep golden and crackling-crisp.
FINISH
- Drain on a rack for a minute and hit them with flaky salt. Makes about 3 oz cooked — a rich carnivore snack or side for one.
💡 Pro-Tip: Cold pan, low and slow — pork belly is mostly fat, and rushing it burns the outside before the inside renders. The fat left in the pan is liquid gold; save it to cook eggs or steak.
