Ingredients
- 4 slices of bacon
- 1 cup zucchini
- 1 cup mushrooms
- 2 tbsp onion
- 2 eggs
- Salt
Method
PREP
- Dice 1 cup zucchini, slice 1 cup mushrooms, and dice 2 tbsp onion. Salt the zucchini lightly and leave it on a paper towel while the bacon cooks - it draws out water that would otherwise steam the hash.
COOKING
- Cook 4 slices of bacon in a skillet over medium until crisp. Move them to a plate and leave every bit of the fat in the pan.
- Add the mushrooms to the bacon fat in a single layer and leave them undisturbed 3 to 4 minutes until deeply browned, then add the onion and the blotted zucchini and cook 4 to 5 minutes more, stirring as little as you can stand.
- Crumble the bacon back in, press the hash flat, and make two wells. Crack in 2 eggs, cover, and cook about 3 minutes, until the whites just set.
FINISH
- Season and eat it straight from the pan. Serves 1. Doubles in a 12-inch skillet, no further.
💡 Pro-Tip: Crowding is what turns a hash into a stew. Zucchini and mushrooms are both mostly water, so give them room, keep the heat up, and resist stirring - every stir drops the pan temperature and restarts the browning from zero.
