Ingredients
- 3 eggs
- 2 oz ham
- 1/4 cup green bell pepper
- 2 tbsp onion
- 1 oz shredded cheddar
- half the butter
- Salt
Method
PREP
- Dice 2 oz ham, 1/4 cup green bell pepper, and 2 tbsp onion into even quarter-inch pieces so they all cook at the same rate. Whisk 3 eggs with a pinch of salt.
COOKING
- Melt half the butter in an 8-inch nonstick skillet over medium and saute the pepper and onion 3 minutes, until softened with browned edges. Add the ham for 1 minute more, then tip everything onto a plate.
- Add the rest of the butter, drop the heat to medium-low, and pour in the eggs. Let them set 30 seconds, then repeatedly drag the cooked edge toward the center, tilting the pan so raw egg runs into the gap.
- While the top is still slightly wet, spoon the ham and vegetables over one half and add 1 oz shredded cheddar.
FINISH
- Fold the bare half over the filling, slide it onto the plate, and give it a minute for the cheese to finish melting. Serves 1 - cook them one at a time.
💡 Pro-Tip: Cook the vegetables first and get them out of the pan. Raw pepper and onion release a surprising amount of water, and water trapped inside the fold gives you a soggy omelette that splits when you move it.
