Ingredients
- 5 oz salmon
- 2 eggs
- 1 tbsp butter
- Salt
Method
PREP
- Pat a 5 oz salmon fillet dry and salt it. Whisk 2 eggs in a separate bowl with a small pinch of salt.
COOKING
- Sear the salmon skin-side down in a little butter over medium-high, 3 to 4 minutes, then flip for 1 to 2 minutes until it flakes; set it aside.
- Wipe the pan, drop to low heat, melt 1 tbsp butter, and stir the eggs constantly in slow figure-eights so they set into small, creamy curds.
FINISH
- Flake the warm salmon over the soft eggs and finish with flaky salt. Serves 1.
💡 Pro-Tip: Low and slow is the only way to soft-scramble. Constant stirring over gentle heat builds tiny custard-like curds; high heat scrambles them into dry pebbles in seconds.
