Ingredients
- 4 oz beef liver
- 2 slices of bacon
- 1 tbsp butter
- Salt
Method
PREP
- Pat 4 oz beef liver dry, trim any silverskin, and salt it. If liver has ever tasted too strong to you, soak the slices in a little water or milk for 30 minutes first and pat dry — it mellows the flavor.
COOKING
- Cook 2 slices of bacon in a skillet until crisp, then set them aside and leave the fat in the pan.
- Turn the heat to medium-high and sear the liver in the bacon fat and 1 tbsp butter, just 1 to 2 minutes a side — liver should stay rosy-pink in the middle; overcook it and it turns chalky.
FINISH
- Rest it a minute, crumble the bacon over the top, and spoon the pan butter over. Serves 1.
💡 Pro-Tip: Sear liver fast and pull it while still pink inside — it goes from tender to grainy the moment it is fully cooked through. The few carbs here are natural glycogen; ounce for ounce liver is the most nutrient-dense food there is, which is why carnivores prize it.
