Ingredients
- 6 oz of 80/20 ground beef
- 2 strips bacon
- 1 slice cheddar
Method
PREP
- Form 6 oz of 80/20 ground beef into a patty, dimple the center, and season both sides with salt; have 2 strips bacon and 1 slice cheddar ready.
COOKING
- Heat a cast-iron skillet over high until smoking; sear the patty 3 to 4 minutes until a crust forms (the 80/20 renders plenty of its own fat), then flip.
- Lay the cheddar on top and cook 2 to 3 minutes more to 160F, melting the cheese under a lid. Meanwhile crisp the bacon in a second pan until rendered.
FINISH
- Stack the bacon on the patty, hold the bun, and serve on crisp lettuce with the pan juices. Serves 1 — the whole burger is one serving.
💡 Pro-Tip: Dimple the center of the patty so it cooks flat — without it the middle domes up and the burger rocks on the plate.
