Ingredients
- Bone-In Pork Chops
- 1 tbsp butter
- Salt
Method
PREP
- Pat a 6 oz bone-in pork chop completely dry and salt it well on both sides — a dry surface is what lets it brown instead of steam.
COOKING
- Sear the chop in a hot skillet 3 to 4 minutes without moving it, then flip.
- Drop in 1 tbsp butter, tilt the pan, and spoon the foaming butter over the chop for the last 2 to 3 minutes, until the center reaches 140F.
FINISH
- Rest the chop 5 minutes so the juices settle, then pour the pan butter over the top. Serves 1.
💡 Pro-Tip: Pull the chop at 140F and let carryover finish it to a juicy 145F — pork does not need to be cooked grey anymore, and those last few degrees happen while it rests. Baste with butter, not oil, for that steakhouse crust.
