Ingredients
- Beef Bones
- Salt
Method
PREP
- Roast 2 to 3 lbs of beef marrow and knuckle bones at 425F for 30 minutes — roasting first is what gives the broth its deep, savory color and flavor.
COOKING
- Move the bones to a large pot, cover with cold water by a couple inches, add a big pinch of salt, and bring to a bare simmer.
- Simmer low and slow, uncovered, 12 to 24 hours, skimming the foam now and then and topping up the water as it reduces.
FINISH
- Strain out the solids and salt to taste. Sip a warm mug, or use it as the base for any braise. Makes several servings — one mug per serving.
💡 Pro-Tip: A bare simmer, never a rolling boil, is the difference between clear, silky broth and a cloudy one. When it chills it should wobble like jelly — that jiggle is the collagen and gelatin you are after. A splash of vinegar in the pot helps pull minerals from the bones and cooks away.
