Ingredients
- 8 eggs
- 2 tbsp melted butter
- 1 oz pork rinds
- Salt
Method
PREP
- Heat the oven to 350F and line a small loaf pan with parchment, leaving an overhang on the long sides so you can lift the loaf straight out later.
- Blitz 1 oz pork rinds to a fine dust. Blend 8 eggs, 2 tbsp melted butter, the pork rind dust, and a good pinch of salt for 30 seconds, until completely smooth and slightly frothy.
COOKING
- Pour the batter into the pan and bake 25 to 30 minutes, until the top is set and a knife slid into the middle comes out clean.
FINISH
- Lift the loaf out by the parchment, cool 10 minutes, then cut it into 8 slices. To serve, sear slices in butter over medium-high 1 to 2 minutes a side until golden. Makes 8 slices; a serving is 3 seared slices with the butter they cooked in.
💡 Pro-Tip: This is the closest thing carnivore has to toast, and it slices best straight from the fridge - cold loaf cuts clean, warm loaf tears. It actually crisps up better on day 3 than day 1, once the surface has dried out a little.
