What to eat on a carnivore diet
On carnivore you eat animals and what comes out of them: meat, fish, eggs, and animal fat โ with dairy as an optional extra. That is the whole list. There is no plant food in the structural part of a meal, no grains, no sugar, no oils pressed from seeds. Carbohydrate intake lands near zero without you counting anything, which is why the food decisions are easy and the shopping decisions are not. Here are the core foods, the gray areas, how much fat to eat with your protein, and how to run it on cheap cuts instead of ribeye.
The core foods
- Ruminant meat โ beef, lamb, bison, goat. The backbone of most people's carnivore, for the nutrient density and the consistent fat.
- Pork and poultry โ pork shoulder, belly, chops; chicken thighs, whole birds, turkey. Cheaper per gram of protein than steak, and the skin carries the fat you need.
- Fish and shellfish โ salmon, mackerel, sardines, shrimp, oysters. Fatty fish covers omega-3s that land meat does not.
- Eggs โ one large egg is about 72 calories, 6 g of protein, 5 g of fat and well under half a gram of carbohydrate. The cheapest complete protein in the shop.
- Animal fats โ butter, ghee, tallow, lard, duck fat. This is what you cook in, and how you close the calorie gap when lean cuts leave you short.
- Salt โ not optional. See the electrolyte note below.
Muscle meat and eggs are effectively carbohydrate-free, so the "how many carbs is this" question disappears. The question that replaces it is whether you are eating enough total food, which is the one most beginners get wrong.
The gray areas
Dairy
Hard aged cheese, butter and heavy cream are low enough in lactose to fit, and plenty of people eat them daily. Milk does not fit โ a cup carries about 12 g of sugar. Dairy is also the single most common cause of "carnivore isn't working for me": it stalls some people's appetite control and irritates some people's gut. If you are troubleshooting anything, drop dairy for two weeks first and add it back on purpose.
Coffee, tea, spices
All plant products, all effectively carb-free in the amounts used. Strict carnivore excludes them; most people keep coffee and salt-plus-pepper and get on with their lives. Neither position is wrong โ the distinction only matters if you are using carnivore as an elimination protocol to test for a food trigger.
"Animal-based" with honey and fruit
You will see this framed as carnivore. It is not โ honey is sugar, and fruit is sugar plus fiber. That can be a reasonable way to eat, but it will not keep you in ketosis. If you want some plant food without leaving low carb, that is ketovore.
How much fat with your protein
Protein carries 4 calories per gram, fat carries 9. If you eat only lean cuts, you physically cannot get enough calories without eating an uncomfortable volume of meat, and the result is the classic week-two crash โ tired, cold, constantly hungry. Set your protein target first (the protein guide covers the arithmetic: 1.6โ2.2 g per kg of goal bodyweight), then let fat fill the rest of the calories.
In practice that means buying fattier cuts rather than pouring fat on lean ones: 80/20 ground beef instead of 93/7, chicken thighs instead of breast, pork shoulder instead of loin. A pound of 80/20 ground beef is roughly 1,150 calories and about 78 g of protein โ a complete meal on its own.
Organ meat, and how little you need
Liver is the densest food in the ordinary food supply for vitamin A, B12, copper and folate. It is also the one carnivore food with meaningful carbohydrate โ about 4 g per 100 g of beef liver, from stored glycogen โ which is irrelevant at the portions anyone eats. A few ounces once or twice a week covers what muscle meat leaves thin. If the taste is the problem, freeze it in thumb-sized pieces and mix it into ground beef.
Doing it cheaply
Carnivore's steak-diet reputation is a shopping habit, not a requirement. Per 100 g raw, USDA-style ballparks:
| Food | Calories | Protein | Fat |
|---|---|---|---|
| 80/20 ground beef | 254 | 17 g | 20 g |
| Chicken thigh, skin on | 211 | 17 g | 15 g |
| Pork shoulder | 211 | 17 g | 15 g |
| Sardines, canned in oil | 208 | 25 g | 11 g |
| Beef liver | 135 | 20 g | 4 g |
| Egg (per large egg) | 72 | 6 g | 5 g |
Ground beef, eggs, chicken thighs, pork shoulder, canned fish and liver will run the entire diet. Buy the large pack, cook it all at once, and keep tallow or butter on hand to bring a lean batch up to calorie. Steak is a treat you can afford because the other five days are cheap.
Two things that go wrong in week one
The first is salt. Cutting carbohydrate lowers insulin, and lower insulin makes the kidneys excrete sodium โ so the headache, fatigue and cramps people blame on "no carbs" are usually a salt shortfall. Salt your food heavily and start on day one; the electrolyte guide has the amounts.
The second is undereating. Meat is filling, appetite drops, and people end up several hundred calories short every day without noticing. For the first two weeks, eat to comfortable fullness at every meal instead of restricting โ that takes care of itself later.
Ready-made plates, all macro-verified: carnivore breakfasts, dinners, snacks, or the full carnivore collection. If you are still deciding between tracks, carnivore vs keto lays out the trade-offs.
None of this is medical advice. If you take medication for diabetes, blood pressure or kidney disease, talk to your doctor before you cut carbohydrate this far โ the dose that was right on your old diet may be too strong on this one, and that adjustment is theirs to make, not yours.
In the app, the fridge match will build a carnivore meal out of whatever is actually in your freezer, and the tracker shows whether you hit your protein without you weighing anything โ start free.
Questions people ask
What can you eat on the carnivore diet?
Meat, fish, eggs, animal fats and salt, with dairy as an optional extra. Beef, lamb, pork, poultry, fatty fish and eggs cover it, and butter, tallow or lard fill the calorie gap when a cut is lean.
Can you have coffee and spices on carnivore?
They are plant products, so strict carnivore excludes them, but both are effectively carb-free in the amounts used and most people keep coffee, salt and pepper. Drop them only if you are using carnivore as an elimination diet to find a food trigger.
Is dairy allowed on carnivore?
Hard aged cheese, butter and heavy cream fit; milk does not, because a cup carries about 12 g of sugar. Dairy is also the most common thing to remove first if carnivore is not going well for you.
Do you have to eat organ meat?
No, but a few ounces of liver once or twice a week is the easiest way to cover vitamin A, B12, copper and folate. Freezing it in small pieces and mixing it into ground beef gets it down if the taste is the problem.
How do you do carnivore on a budget?
Ground beef, eggs, chicken thighs, pork shoulder, canned sardines and liver run the entire diet at a fraction of steak prices. Buy large packs, cook them in one go, and keep butter or tallow to bring lean batches up to calorie.
